Use Innovation to Appeal
Caterers wanting a share of today’s ever-stretched consumer pound will need to become more innovative to attract customers, as more and more people have turned to making sandwiches at home and one report even claims that Robert Dyas saw sales of their lunchboxes soar by 68% towards the end of last year*. Marc Lelieur, Marketing Manager, Moy Park Foodservice says, “Consumers don’t attach a ‘real’ cost to the contents of their lunchboxes so the challenge for caterers is to entice them with items not so easily made at home, whilst maintaining affordability.”

Chicken continues to dominate the sandwich fixture and is growing faster than any other sandwich protein. In their most recent report (May 2008) the BSA estimated over 39,000 tonnes of chicken meat went into sandwiches, compared to only just over 8,000 tonnes of ham and 6,500 tonnes of cheese.

Wrap it up with Chicken
The traditional sandwich skillet continues to dominate the category, accounting for almost 67% of all sandwiches sold and growing by 2% last year, but wraps accounted for 3% of the total market** and the appeal to customers is easy to understand; this versatile format is great for both hot and cold fillings, can be made from a number of flatbread carriers, is perceived healthier than traditional ‘fast food’ and is convenient to eat single-handed, ‘on the hoof’.
